Creamy Vegan Caesar Salad

When people talk about a Caesar salad, they generally acquaint it with chunks of chicken mixed with veggies and croutons. Now just because someone is vegan that doesn’t mean that they need to miss out on this classic salad. Caesar salads are amazing if they have the right quantity of veggies and creaminess. Adding nuts to the salad is also a great trick. Today, I plan to introduce my version of vegan Caesar salad. You can garnish the salad with roasted chickpea croutons that are a great substitute for the bread croutons. Here are a list of ingredients you will need.

For the chickpea croutons:

1 cup of cooked and drained chickpeas

1 teaspoon of olive oil

½ teaspoon red chili powder

1/2 teaspoon of salt

1/2 teaspoon of garlic powder


For the dressing:

½ cup of cashews soaked overnight

1/2 teaspoon of garlic powder

1/4 cup of water

2 tablespoons of olive oil

1 tablespoon of lemon juice

1/2 tablespoon of mustard

1/2 tablespoon of vegan Worcestershire sauce

½ teaspoon of salt


For the salad:

1 small kale

1 small lettuce



Step 1: Firstly, make sure you’ve soaked the cashews for at least 12 hours. Ideally, do this the night before.

Step 2: For the chickpeas, simply pre-heat your oven to 400 degrees Fahrenheit. Lightly towel dry the cooked and drained chickpeas. Place them on a baking sheet and drizzle some olive oil, salt, garlic powder and red chili powder. Gently toss the chickpeas after 10 minutes and let them continue to bake for another 5 to 7 minutes, until they’re a light golden brown. Let them cool.

Step 3: Now take the soaked cashews and add them to a blender. Make a smooth paste and add the seasonings mentioned in the list of ingredients.

Step 4: Now take a large bowl and add the destemmed lettuce and kale that you’ve finely chopped.

Step 5: Add the dressing to the kale and lettuce and toss the salad. Lastly add the roasted chickpeas and enjoy your Caesar salad, 100% vegan!
