To the delight of many a vegan, the Herbivorous Butcher of Minneapolis had its grand opening just a few days ago. For those of you not in the know, the Herbivorous Butcher is the first all-vegan butcher shop in the United States!
What started out as a stand at a farmer’s market, later became a pop-up around the city, an online store, and is now a fully-fledged shop!
It all began when Aubry Walch became vegan 18 years ago, followed by her brother Kale Walch 14 years later. Aubry had the idea of opening a vegan butcher shop one day, and ever since, they planned to make that idea a reality.
The sister and brother turned to Kickstarter to help raise funds for their business. Fortunately, they managed to raise over $60,000 as it became the most successful vegan project on the website. On their blog, they attribute the shop's successful growth to their loyal customers and over 700 backers.
What they sell
Their menu features 35 different varieties of vegan meats including sausage, bologna, ribs, meatballs, bacon, jerky, pepperoni, steak, cheeses such as pepper jack, Havarti, mozzarella, Camembert, and Cheddar, and butters like maple, plain, and Port Wine.
To create the cruelty-free alternatives they have made use of ingredients such as nutritional yeast, vital wheat gluten, tomato paste, beans, coconut oil, and soy milk.
There is something for everyone
The butchery has already received rave reviews from vegans, vegetarians, and omnivores alike! All of their cheeses are gluten-free, while creating gluten-free meats is on their future agenda.
For those of you who are unable to visit the store physically, fear not! Starting in February, you will be able to purchase some of their food items online. To get your order as fast as possible, you can pre-order a variety of meats in different combinations from the HB website.
