2 Hearty Vegan Soups to Keep You Warm This Winter

When winter begins, you may start having cravings for something that keeps you warm, or helps you to combat with chilly weather or refuels you after enjoying ice skating or a frozen winter walk. Here are two perfect vegan soups, which not only will provide you with warmth and comfort, but will also nourish your body with awesome vitamins and nutrients.

1. White Bean Swiss chard Soup

During winter, bean soup is a common and popular choice to help folks deal with the winter blues. This soup is very easy to make, but it is packed with essential vitamins and nutrients. It has two main ingredients-- white bean and Swiss chard. Beans are low in fat, and Swiss chard contains vitamins that are important for our immune system. Moreover, the combination of these two ingredients will definitely give you a delicious, healthy ,and fragrant bowl of goodness!

Prep Time: 15 minutes

Cook Time: 30 minutes


  1. 1 large size carrot, finely chopped
  2. 1 medium size onion, finely chopped
  3. 3 garlic cloves, finely chopped
  4. 2 tbsp. of olive oil
  5. 1 bunch of Swiss Chard
  6. 6 cups of vegetable broth
  7. 439g of white beans
  8. Salt and pepper to taste


Step 1: Heat a large pot over medium-high heat. Then add olive oil, finely chopped garlic, onion, and carrot. Cook it for about five minutes, until the onions turn light brown.

Step 2: Rinse Swiss chard thoroughly and then roughly slice it. Add it in the pot and let it cook for about three minutes.

Step 3: Pour in six cups of vegetable broth. Heat mixture to the boiling point. After it comes to a boil, cover it and then gently boil on a low temperature for about fifteen minutes.

Step 4: Add white beans and stir. Cover it cook on medium-low for about ten minutes

Step 5: Salt and pepper to taste. Serve hot!


2. Chunky Vegetable Soup

This recipe results in a bowl full of different vegetables which are tasty and packed with essential vitamins and nutrients. It is perfect, especially for a hearty, heart-healthy lunch, as it is completely nourishing and satisfying.

Prep Time: 15 minutes

Cook Time: 1 hour


  1. 3 medium size carrots, roughly chopped
  2. 2 celery stalks, roughly chopped
  3. 2 turnips, roughly chopped
  4. ¼ head cabbage, roughly chopped
  5. 28 oz minced tomatoes
  6. 3 garlic cloves, finely chopped
  7. 1 onion, finely chopped
  8. 9 tsp. olive oil
  9. 7 cups vegetable broth
  10. ½ tsp. dried thyme
  11. Dried herbs such as oregano, parsley and basil
  12. Salt and pepper to taste


Step 1: Heat large pot over high heat. Add olive oil, finely chopped garlic, and onion and dried thyme. Saute for four to six minutes, until the onions are lightly browned.

Step 2: Add the crushed tomatoes and mix well. After this, add all the vegetables, such as carrots, celery stalks, turnips, vegetable broth, cabbage, and dried herbs to the pot and then add salt. Mix it well and then heat it until boiling point.

Step 3: After the boiling point is reached, lower the heat. Boil it on a low temperature for about fifteen minutes. Cover the pot and cook it for an hour.

Step 4: During this hour, check at least once and stir, to make sure that the vegetables are not burning.

Step 5: Add salt and pepper and serve hot.
