Yummy Tofu Curry in Indian Style

This dish is very Indian. Not something very simple but definitely tasty. Rich with tomatoes, peas and Indian spice, it is surely a healthy vegan choice. It is also a colorful and balanced food item that goes well with rice, Indian as well as other breads.

What You Need: 2 medium sized Onions, 2 medium sized tomatoes, ginger paste( 1 tsp), Peas (fresh or frozen) 100 grams, Diced Tofu 100 grams, Vegetable oil – 2 to 3 tsp, salt(1.5 tsp) , red chilli powder(1/2 tsp), turmeric powder(1/3 tsp), garam masala powder(1/2 tsp) (optional), coriander powder(1.5 tsp), finely chopped fresh coriander leaves for garnishing (optional), water

How to Prepare: Peel and chop the onions. Heat cooking oil in a pan for half a minute and add the chopped onions. Let the onions fry while you chop the tomatoes. When onions turn slightly pink, add ginger paste and tomatoes. Keep on low flame and keep stirring. Once the tomatoes become soft, add all the spices (powders mentioned in ingredients) and stir. You will notice a nice fragrance. Add ¼ cup of water and keep on low flame. Now add the peas and stir a little more. After a minute or two, add about 1 to 1.5 cups of water, place the lid and let it cook for 5 minutes. Dice tofu into smaller pieces. Open the lid and check the curry for desired consistency. Add diced tofu and keep on low flame for another 2-3 minutes. This would help the spices penetrate into the tofu pieces. Remove from heat and sprinkle freshly chopped coriander for the best flavor. Serve with rice or bread.

      Thanks Roopam! I think deep fried tofu would also be a tastier choice (but not a healthier one!) for this recipe. Have you tried it?

        Sure it will be tasty. I don't generally fry the tofu for this one. It comes out quite well as is. And is healthier:)
