Ingredients:
- 1-9x12 inch sheet of focaccia bread available at most bakeries
- 6-ounces grated vegan cheese
- 2-tablespoons Italian herbs
- 1-medium garlic clove pressed/crushed
- ½ medium onion sliced into rings
- ½ cup of sliced mushrooms
- 2-medium tomatoes chopped well
- 1 ½ tablespoons olive oil
Directions:
- Prepare baking dish with vegetable cooking spray.
- Preheat oven to 375 degrees.
- Precook onion rings, tomatoes, garlic and mushrooms in skillet over medium heat on stove eye or electric skillet.
- Place sheet of focaccia bread in baking dish.
- Spread chopped onion rings, tomatoes, garlic and mushrooms across sheet of focaccia bread.
- Sprinkle Italian herbs evenly over bread.
- Drizzle olive oil over vegetables on focaccia bread.
- Sprinkle grated vegan cheese over top of vegetables on focaccia bread.
- Cook in oven for 10-12 minutes or until golden brown.
Alternative Considerations:
Spinach, vegan cheese and Italian seasonings over focaccia bread is a wonderful alternative pizza. Broccoli, peppers and zucchini are great additions on a veggie pizza.

Sounds yummy Carolyn, vote no 3. I make my own vegan pizzas sometimes, but they are probably not as good as this! Which vegan cheese do you use? I think you have more of a range and better ones in the US than we have here. You can order ready-made vegan pizzas here though, I think they are made by a company called Redwoods, do you have them over there?

I live in a small town in south Alabama. We have a Walmart and three small grocery stores, but no specialty stores. There is a larger town about 30 minutes away in one direction and an hour away in the other direction. Daiya and Galaxy Nutritional Foods both make good vegan cheese available in the United States. I've not heard of Redwoods. Thanks for the vote and comment!

Of course check the ingredients on the focaccia bread or consider making your own flat pizza bread.

I also recommend roasted pine nuts, sun dried tomatoes and artichoke hearts. You may go as far as making it with asparagus. If you want to skip the vegan cheese, use a vegan pesto - it gives that gooeyness that we love about cheese and adds an array of herbs automatically. But, out of sheer laziness, I just reach for Amy's vegan pizza once in a while.... Voted!

Yummy! Great post! Thanks.. I like all the addings ... all veggies galore on my pizza! It's amazing how much 'clearer' the taste is on a Vegan pizza then a non-Vegan.. without being drown by the grease of the meat and cheese.. it's simply scrumptious to let the taste buds go crazy! :) Only took me 40 years to try it! ;) Voted!
