Different rice preparations have been popular in different parts of India, where it can be eaten with curries or cooked with vegetables and a variety of seasonings. Pulao is a popular rice dish from India cooked with rice and vegetables. Rice Pulao also works as a meal by itself. For special occasions, it is made in addition to a few other curries.
Very healthy, its cooked along with a mix of vegetables that gives the whole dish a nice look and flavor along with the nutrition. Once you have your veggies ready its pretty simple to cook. You can make this with brown or white rice, I made it here with white rice and you can choose your mix of vegetables too.
Ingredients (Serves 2):
- 1 cup White or Brown rice washed
- ½ cup Green peas
- 1 cup Green beans chopped
- 1 medium Potato peeled and diced
- 1 Carrot peeled and chopped small
- 1 tea spoon Cumin seeds
- ½ Onion chopped
- 1 black Cardamom pod
- 1 teaspoon Coriander powder
- Salt and Black pepper to taste
- 1 Thai green chili chopped (optional)
- 3 cups water
Chop the vegetables and wash the rice and keep aside. Take a pan large enough to cook rice. Heat a tablespoon oil and add cumin seeds and the cardamom pod. Now add the green chili if you’re using it and the onions and stir just a bit. Add the green beans, peas, carrots, potatoes and rice and mix in coriander powder, salt and black pepper and stir to mix.
Add 3 cups water and allow to come to a boil. Once the water is almost gone, lower the heat and cover to cook for another 5 minutes till rice is soft. Remove from heat and serve! Garnish with Cilantro if you want.
