Vegan Sweet and Sour Tofu Stir-Fry

Living here in Paris is so wonderful but can also be very hard on a vegan. The rich foods that are served here are filled with creams, milk and cheese. In France the majority of the people eat so much meat and dairy products. I have found a few nice café to enjoy a simple lunch at that are suited for vegans. A year ago when I decided to move to France to be close to my daughter and her children I started preparing. Inside my suit case went my box filled with recipes. I searched the Internet for stores to shop at and places that I could buy the foods I am use to eating. I found a few ingredients that were not readily available in France so I stocked up on them. I have to say the last year has been such a pleasure and the sights are amazing. In my home we try to have one meal as a family. Last night I whipped up one of my old time favorites for the family. The children were delighted and ate the entire pan.

Ingredients:

1 Tablespoon Sesame Oil

½ Cup Thinly Sliced Celery

¼ Cup Chopped Red Bell Pepper

¼ Cup Chopped Green Onions

½ Cup Chopped Broccoli

½ Cup Chopped Cauliflower

¼ Cup Chopped Carrots

½ Teaspoon Ground Ginger

1 Teaspoon Dark Soy Sauce

1 Teaspoon Lemon Juice

½ Teaspoon Vegan Sugar

1 Package Very Firm Tofu cubed

Prepare:

In your wok heat the oil over medium heat. Add the celery, bell peppers, onions, ginger, broccoli, cauliflower and carrots. Cook and stir for 5 to 7 minutes.

Add the soy sauce, lemon juice and vegan sugar, cook and stir 1 minute. Add the extra firm tofu cubed. Cook 3 minutes or until the tofu is cooked.

Serve

Serve with rice and a nice salad.
