Vegan Summer Grill: Sausage & Vegetables

Cook Time: 15 to 20 Minutes

This last weekend was a beautiful spring day here in France. We spent the day riding bicycles and enjoying the weather. Our ride took us by the open farmers market. The vegetables were so fresh I bought mushrooms, tomatoes, sugar snap peas, zucchini, yellow squash, red and green bell peppers, and fresh parsley. On our return home, it was time to uncover the barbecue and fire up the grill.


  • 2 Zucchini cut into slices
  • 2 Yellow squash cut into slices
  • 1 Red bell pepper cut into chunks
  • 1 Green bell pepper cut into chunks
  • 10 Mushroom cut into slices
  • 4 Tomatoes cut into wedges
  • 20 Sugar Snap Peas cut into thirds

Ingredients for Marinade

  • ½ Cup Ballistic Vinegar
  • ¼ Cup Water
  • 2/3 Cup Virgin Olive Oil
  • 2 Tablespoons Dijon Mustard
  • 2 Teaspoon Vegan Organic Sugar
  • ¼ Teaspoon Oregon
  • ¼ Teaspoon Rosemary
  • ½ Teaspoon Dried Parsley Flakes
  • Salt and Pepper to taste

Ingredients Vegan Sausage

  • 1 to 2 Packages Field Roast Sausages, Italian (Vegan brand)
  • 1 ½ Cups Tomatoes diced
  • ¼ Cup Virgin Olive Oil
  • 1 Teaspoon Salt
  • ½ Teaspoon Pepper
  • 2 Tablespoons Dark Soy Sauce
  • 2 Tablespoons Ballistic Vinegar
  • 2 Cloves Garlic minced

Ingredients for Grilled French Bread

  • 1 to 2 Loaves French bread
  • ½ Cup Bertolli Extra Virgin Olive Oil Spread
  • 3 Garlic Cloves pressed

To prepare vegetables for grilling:

  1. Add all vegetables to 9x9 aluminum disposable baking pan
  2. Mix all ingredients of marinate sauce in bowl, stir well
  3. Pour over vegetable in pan, coat well, stir and mix (just coat the vegetables do not soak them in the sauce)
  4. Cover with aluminum foil

To prepare vegan sausage for grilling:

  1. Place sausages on wooden or medal barbecue skewers
  2. Add remaining ingredients to saucepan, cook on medium-low heat until tomatoes are cooked and form a sauce, add ¼ to ½ cup water during cooking to thin sauce; cook time 10 minutes

To prepare French bread for grilling:

  1. Cut loaf in half and split down the middle
  2. Cream the olive oil spread in a bowl
  3. Press garlic, add pressed garlic to olive oil spread
  4. Mix well into the olive oil spreadSpread on the French breadPlace halves together and roll up in aluminum foil

Cooking on the grill:

  1. Place the pan of vegetable towards the back of the grill. If your grill has an upper and lower shelf place on the upper shelf of the grill; grill the vegetable until tender; 15 minutes depending on the heat of the barbecue
  2. Place the sausages on the grill; use the tomato sauce mixture to brush over the sausages as they grill; cook until done adding sauce as you rotate sausage on the grill
  3. Just before the vegetable and sausage are done add the French bread to the grill. Cook until well heated and olive oil spread melts and the garlic flavor seeps into the bread

To Serve:

Serve with fresh green salad, macaroni salad, or potato salad. The sausage can also be served on hot dog buns. The vegetable can vary depending on your taste. I have used cauliflower, broccoli, sugar snap peas, Chinese pea pods, and different varieties of squash. Enjoy the summer months and grilling on your barbecue. The sauce I made for the sausage can be used on any variety of foods. My family enjoys this sauce in place of ketchup for French fries, vegan hamburger and hot dog. Enjoy and happy grilling.
