Personally, I love it when it’s sunny and warm outside. It just makes me want to try out all sorts of different cooling beverages and engage in lots of other fun activities. Pina Coladas have been the official beverage of Puerto Rico for some time, and they're much enjoyed by many the world over. This is a classic, easy-going summer cocktail, typically made with cream of coconut, pineapple juice, and Rum.
This recipe is a thoroughly vegan version, made with rich, creamy coconut milk. Go for it! I mean, come on-- coconut milk is, after all, nutritious and healthy. It always gives recipes a great unique flavor. You can also use vanilla or soy milk if you like, but be sure to add pineapples for flavor.
Ingredients:
- 1 Orange peeled and diced
- 1 cup Pineapple chunks
- 1 cup Coconut Milk
- 1 teaspoon Sugar (optional)
- 1/2 cup Rum
Directions:
- Puree the above ingredients in a blender until smooth.
- Pour into a glass and top with a pineapple slice or a few cherries. Sugar is optional.
- Throw in a few ice cubes, and allow the beverage to cool.
- Enjoy!

Voted. I like that song you refer to! This sounds delicious: it's a "mocktail " version of Pina Colada, isn't it? I presume the alcoholic version contains white rum. Both versions sound delicious! Btw, I made your recipe today for Spicy Bread Fritters, absolutely yummy!! Just as good as French toast made with egg. So no doubt I will cook that again in future, and I intend to share it on Facebook.

Actually, pina coladas are generally made with cream of coconut, pineapple juice, and (unless you're going for a virgin cocktail) rum. Cream of coconut IS vegan. When you chill coconut milk, it separates, much like un-homogenized dairy milk. The thick stuff you can skim off the top is coconut cream. The only difference between "coconut cream" and "cream of coconut" that you can find in the drink mixer aisle, is sweetener. Your recipe would make for a similar-tasting pina colada, but it wouldn't be nearly thick enough because of all the water in the coconut milk. If you just use coconut cream you'll get a more authentic taste. PS - to all readers - pina coladas ARE vegan so hooray! :)
