I adore Mexican food and being a vegan it is easy to prepare at home. I have replaced the meat, seafood, and pork with vegan hamburger, red pinto beans, and kidney beans. You still have the same great taste without the meat. When I use vegan hamburger I prepare my favorite hamburger recipe the day before. Cook up my hamburger, put them in the refrigerator, and when ready to cook my food the next day break them apart like cooked hamburger. This is simple and so healthy for you. You can enjoy Mexican tacos made with vegan hamburger recipes.
Ingredients:
- ¾ Cup chopped onions
- 2 Tablespoon vegan margarine
- 1 15 ounce can tomato sauce
- 1 4 ounce can diced green chilies
- 2 Teaspoons cumin
- 1 Teaspoon salt
- ¼ Teaspoon red pepper
- 1 Package 7 ¼ ounces tortilla chips, crushed
- 2 Cups Vegan Monterey Jack cheese, shredded
- 1 Cup Vegan sour cream
- 3 Cups cook red pinto beans or kidney beans – I use ½ and ½
- 1 Cup Vegan Cheddar cheese, shredded
Prepare:
- Sauté onions in margarine
- Add tomato sauce, chilies, cumin, salt, red pepper
- Simmer 10 minutes
Cooking:
- Prepare 9 in square baking pan – coat with margarine
- 1st layer – ½ crushed tortilla chips
- 2nd layer – ½ shredded vegan Monterey Jack cheese
- 3rd layer – ½ cook red pinto beans or kidney beans
- 4th layer – ½ prepared sauce
- Repeat the 4 layers
- Bake in preheated oven 350 degrees for 25 minutes
- Remove from oven
- Top with vegan sour cream
- Sprinkle vegan Cheddar cheese on top of sour cream
- Bake 10 minutes
Makes 6 to 8 servings
This recipe is great for dinner parties; add desert, homemade salsa, avocadoes, and salad. Your dinner guest will not realize this is vegan and not the true Mexican recipe. In this recipe I have used Vegan Hamburger instead of pinto beans and served refried beans with this dish. Be creative when making this dish and mix the beans you use. This is a great main meal for any night of the week.
