Biryani is a typical dish which comes from Mughlai cuisine. It is a recipe which is made out of vegetables and rice. It is commonly consumed in India. Today I am going to share one of my favorite versions of vegetable Biryani. I am going to prepare this dish in Indian style, by adding some authentic spices which will give this dish a traditional and spicy flavor. It is full of vegetables and healthy nutrients, I am using my favorite vegetables and you can customize it by using your favorite veggies. Let’s get started!
INGREDIENTS:
• 3 cups boiled brown rice
• 2 onions finely chopped
• 3 cups tomatoes finely chopped
• 1 carrot boiled and diced
• 2 cups boiled French beans
• 1 tablespoon cumin seeds
• ½ teaspoon garlic paste
• ½ Teaspoon ginger paste
• 1 tablespoon red chili paste
• 1 tablespoon coriander powder
• 1 teaspoon turmeric powder
• 1 tablespoon curry paste [optional]
• Chopped cilantro
• Salt to taste
• Oil to cook
STEP 1: Heat some oil in pan, then add the cumin seeds, chopped onions and let the onions cook for at least 5 minutes until the color turns golden brown.
STEP 2: When the onions are cooked properly, you can add the carrot and French beans. Let them cook for another 5 minutes. You can cover the pan for 5 minutes to let the vegetables cook thoroughly.
STEP 3: Now that the vegetables are cooked properly, add the ginger and garlic paste to the vegetable mixture.
STEP 4: Next, add the coriander powder, turmeric powder, red curry paste, and red chili paste. Then add the salt to taste and mix it well.
STEP 5: Now add the tomato puree and mix well and let the mixture cook for a good 5 minutes.
STEP 6: Now that we have the mixture ready, we can begin with adding the rice.
STEP 7: Take another container and start adding the layers now. At the bottom of the container, add a layer of rice. Then on top of that layer add a layer of vegetables. Repeat/
STEP 8: Cover the lid of the container and let the vegetable Biryani cook for 5-7 minutes.
*You can garnish the Biryani with chopped cilantro and serve it piping hot! This dish can also be enjoyed with any vegetable curry or lentil curry. I prefer having Biryani with my favorite Indian vegetable curry. Enjoy!
