Vegan Garlic “Chicken” and Vegetable Stir-Fry

Now that spring is here time to bring out the wok to cook all the fresh vegetables in the market. Wok stir-frying brings out the flavor of all your vegetables. Wok cooking is quick and everything you cook in a wok tastes so good. Add your ginger roots, garlic, and other seasoning to cook your vegetable and dinner is done in no time. In my garlic chicken and vegetable stir-fry I use the vegetable I have on hand. You can add any assortment of vegetable to this wonderful recipe. Please try using your favorite vegetables when preparing this recipe.


  • 3 Cups Beyond Meat, chicken strips, sliced
  • 1 ½ Teaspoons dry Egg Replacer plus 2 Tablespoons water
  • 1 Tablespoon cornstarch
  • 1 Tablespoon dry white wine
  • 4 green onions
  • 1 teaspoon minced ginger root
  • 4 teaspoons minced fresh garlic (about 8 medium cloves)
  • 2 Tablespoons peanut oil
  • 2 Cups fresh mushroom, sliced
  • 1 Cup Chinese pea pods, slicked, ½-inch pieces
  • 1 Cup Fresh Broccoli florets, cleaned and cut
  • 1 Cup fresh cauliflower, cleaned and cut
  • 1 Cup fresh carrots, sliced
  • 1 Small zucchini, sliced
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 2 Cups cooked Jasmine rice

Sauce ingredients:

  • 1 teaspoon crushed chili paste (Huy Fong Sambal Oelek) or more to taste
  • 2 teaspoons vegan sugar
  • 1 teaspoon cornstarch
  • 2 teaspoons rice wine vinegar
  • 1 Tablespoon water
  • 2 Tablespoons dry white wine
  • 2 Tablespoons black soy sauce

Prepare Beyond Meat Chicken Strips:

  1. Place Beyond Meat, chicken strips in freezer for 30 minutes or until firm
  2. Remove from freezer and cut into thin strips
  3. In small mixing bowl, add egg replacer and water, mix well
  4. Add cornstarch and wine to egg replacer, stirring until cornstarch is dissolved
  5. Add Beyond Meat, chicken strips to mixing bowl, stir until coated
  6. Let stand at room temperature for 30 minutes
  7. Cook Jasmine rice in a rice cooker according to directions on package
  8. Combine all sauce ingredients in small mixing bowl, mixing well

Cooking instructions:

  1. Heat wok on stove top, add peanut oil
  2. Stir-fry Beyond Meats, chicken strips until cooked
  3. Remove cooked chicken strips from wok using slotted spoon
  4. Add onions, minced ginger root, and garlic to wok
  5. Stir-fry for 30 seconds, until garlic and ginger root is fragrant but not browned
  6. Add vegetables to wok and stir-fry for 3 to 4 minutes, until vegetables are cooked and crisp
  7. Add chicken strips to vegetables in wok
  8. Stir-fry for 1-minute
  9. Mix sauce ingredients and pour over chicken and vegetable in wok
  10. Stir constantly, mixing sauce into chicken and vegetables
  11. Cook 2 to 3 minutes until sauce thickens
  12. Remove from heat and splash 2 Tablespoons dark sesame oil over top of top of chicken and vegetables
  13. Serve over Jasmine rice
