You scream, I scream, we all scream for vegan ice cream! Now even though vegan ice cream is readily available in the market, I think it's way more fun to make your very own vegan ice cream. The whole experience is enjoyable and I love to get children involved in the making of this particular vegan coconut and chocolate ice cream.
I feel like a gourmet vegan chef who is busy whipping out the best ice cream recipe just for you. So let's get started. One small secret: I'm planning to use this ice cream as a base for one of my future recipes, but that's going to be a surprise! Now back to this one. To get started you will have to get the following ingredients.
Ingredients:
½ cup of full-fat coconut milk
1 cup of sugar
1/2 cup of unsweetened cocoa powder
Method:
Step 1: Take a large pan and place it on a low flame. Add all of the ingredients slowly and keep stirring.
Step 2: Let the mixture simmer for about 8 to 10 minutes until it has thickened slightly.
Step 3: Now let the mixture cool a bit and then pour the mixture into a container.
Step 4: Refrigerate the mixture for at least 3 to 4 hours.
Step 5: This is the fun part, add the mixture to an ice cream maker and churn it until it’s ready to set. Now this will usually take about 15 minutes.
Step 6: All you have to do now is freeze the mixture for a few hours.
This recipe makes about 2 cups of pure bliss vegan ice cream. I love to add some vegan chocolate shavings and coconut shavings when serving this ice cream. There are various kinds of flavors that you can experiment with when it comes to ice cream, but I feel this combination is a hit!
