Its still the sweet month of the year and so I thought of coming back and sharing this sweet and simple recipe I tried for the first time. Yes vegan coconut macaroons. I have been thinking of trying out cookies for a while. Though I haven’t done much of baking in the past must I admit I do have a sweet tooth and am always willing to try anything that tastes sweet. And I was quite delighted with the outcome. I love coconut and most recipes with coconut. These macaroons are soft and delicious. Make for a great snack.
All you need is:
a) 1 cup sugar
b) 1 cup all purpose flour
c) 3 cups shredded coconut
d) ¾ cup almond milk
e) 1 teaspoon Vanilla extract
f) 1 teaspoon salt
Mix together the milk, sugar, shredded coconut and vanilla extract. Mix the salt and flour. gently spoon in the flour and salt slowly into this mixture and keep stirring till you get a nice well blended dough.
Meanwhile set the oven to pre-heat at 350 degree Fahrenheit. Line a parchment paper and spoon out small balls on the cookie sheet. Bake for about 15-20 minutes in batches. Remove and serve warm or later when cool. Store them till they last!

Voted. They look and sound delicious! I love anything with coconut in too, I recently shared a recipe for coconut and cherry cookies, which you might like. I was just wondering about the macaroons in your photo here: they look as if they have been made with a forcing bag (for icing cakes, etc) rather than spooned out in balls on the baking tray. That sounds like a good way to do them too, to get that pretty fluted effect!

yes you can do that or just use a fork and press gently for that effect.
