Vegan Chili for my Carnivorous Boyfriend

Cook Time: 4 hours

Cooking anything vegan for my non-vegan boyfriend can sometimes be a daunting task. He isn’t one to turn his nose to anything green or leafy, but as soon as the word “tofu” is spoken, he is sure to run to McDonald’s for a Big Mac.

What I’ve learned along the way is that the key to satisfying an avid meat eater is to avoid meat replacements and stick to the real whole foods of a plant-based diet. If someone regularly enjoys meat products, they are more than likely going to be able to tell the difference between cooked ground beef and fake beef crumbles, and they are more than likely just not going to like it. I have tried this with dairy substitutes as well-- that's even worse.

For this recipe, I could have gone many routes, but I chose to keep it simple. Because of this, I had to go crazy with the spices. That's honestly what I love most about chili- dumping as many combinations of spices as I want into the pot and tasting along the way. 

 

Ingredients

1 yellow onion, diced

1 15oz can corn

2 15 oz cans black beans

2 15 oz cans kidney beans

1 8oz can tomato sauce

1 15 oz can diced tomatoes

1 cup water

Seasonings

1 teaspoon salt

1 teaspoon nutmeg

1 teaspoon cayenne pepper

1 tablespoon seasoned salt

1 tablespoon cumin

1 tablespoon garlic powder

2 tablespoons chili powder

2 tablespoons nutritional yeast

 

I put this all into the crockpot and let it cook for 4 hours on high heat with occasional stirring. I would suggest letting it cook for 8+ hours to really let the flavors settle in, but let's face it, I was hangry.

I topped off my bowl of chili with a sprinkle of cilantro and some nooch. My boyfriend finished his bowl in less than a minute and said, "OK that was really good chili." I high-fived myself.
