Making calzones and/or pizza at home is very easy and is surprisingly inexpensive. If you have not heard of the calzone, it is a folded pizza, that is similar to a giant empanada. When deep fried, it is called a panzerotto, but it is virtually the same as a calzone otherwise.
There are a few steps involved, so plan ahead. The dough requires at least one hour to rise. Dough Ingredients
- 3 cups all purpose flour
- 1 cup water
- 1/4 cup olive oil
- 2 tablespoons yeast
- 1 tablespoon sugar
- 1 tablespoon salt
Perfect Pizza Sauce
- 2 cups crushed tomatoes
- 1 cup water
- 3 garlic cloves, chopped
- 2 tablespoons salt
- 2 tablespoons dried oregano
Fillings
- Sliced olives
- Arugula
- Sliced onions
- Sundried tomatoes
- Mushrooms
- Vegan cheese
Dough
- In a small cup, mix yeast, sugar and 1/2 cup warm water. Proof for 10 minutes.
- In a large bowl combine flour and salt and stir.
- Add oil, water and yeast-water stir with a spoon until combined. Finish with your hands and kneed for 5 minutes until a smooth ball of dough has been formed.
- Leave in the bowl and cover with tea towels for one hour so that it rises.
Sauce
- In a large pot combine all ingredients.
- Cook over medium heat for 20 minutes, or until most of the water has evaporated.
- Taste and adjust salt as needed.
Rolling and Stuffing
- Lightly dust your work surface with flour.
- Remove the dough from the bowl where it has been rising and knead for a few minutes.
- Cut the dough into 4 equal pieces and set 3 aside.
- Lightly dust a rolling pin and being to roll out the dough into a thin circle (thickness is up to you).
- Add a generous amount of tomato sauce, and spread evenly into the centre of the dough.
- Add your favorite fillings to half of the dough.
- Carefully fold over the other half and pinch closed.
Bake
- Transfer calzone to a baking sheet, lined with parchment paper and bake at 400 degrees Fahrenheit for 25 minutes.
- Once cooked, serve with a side of extra sauce.
