The potato is India’s favorite root crop. From South India to North India there is approximately 60 different dishes are prepared with potatoes. Today I am going to share the recipe of a scrumptious vegan Indian potato curry which is known as Aloo Jeera in India. This potato curry is one of the most common potato recipes prepared in India. It is a dish we keep very close to the heart.
INGREDIENTS:
- 5 potatoes of approximately the same size
- 1 ½ teaspoon cumin seeds
- 3 teaspoons oil
- ½ cup chopped coriander
- 1 chopped green chili
- ½ teaspoon red chili powder (optional)
- ½ teaspoon turmeric powder (optional)
- 3 teaspoons lemon juice
- Salt to taste
INSTRUCTIONS:
STEP 1: Boil the potatoes and then peel their skins.
STEP 2: Now cut the potatoes in to small cubes and heat some oil in a pan.
STEP 3: Add the cumin seeds to the oil and then add the chopped green chilies and fry them for at least a minute.
STEP 4: Now add the chopped potato cubes and mix them well.
STEP 5: Ensure that the potatoes, cumin seeds and green chilies are mixed and cooked properly.
STEP 6: Then add the turmeric powder, red chili powder, and salt.
STEP 7: Cover the curry for five minutes and let the potatoes cook in the steam.
STEP 8: Now add lemon juice, chopped coriander and mix the potatoes well.
That’s it! You are done! Serve the potato curry piping hot with some steamed rice and make the most of this tasty and healthy meal with some great company.
