To extoll the benefits of a vegan lifestyle in this forum would be like preaching to the choir. Instead I will discuss how I feel our community can be better served. As vegans (or vegetarians), our conversations, thoughts and actions are so often food focused. We have chosen a lifestyle that is currently so contra-mainstream that in order to maintain it, we must navigate with such alertness and preparedness. But we did not choose this lifestyle because we are fascinated with reading nutrition labels or asking waiters to ensure that absolutely no animal ingredients will be added into our meals. We chose it because we are passionate about a variety ethical, environmental and health concerns.
And we have other concerns too, like our families, our jobs, and the things we like do for fun. I believe it is time that we have a venue that facilitates our food needs, so that we can spend less time focusing on the food and more time on the other aspects of lives that are important to us. This is the very reason I founded VegCo Market.
It is a large scale, full spectrum vegan supermarket that includes a full service deli and bakery. It will offer the widest variety of high quality plant based foods all at affordable prices in a single convenient location. Aside from facilitating grocery shopping for the veg community, the goal is to welcome in the veg curious and veg skeptical so that they may see and experience first-hand what our diets truly consist of.
These people may not be willing to watch Earthlings or Vegucated, they may not attend a conference on health and wellness or read a PETA article, but they may be willing to come shop with us to buy their organic produce at the best price in town. And maybe slowly their opinions towards our lifestyle will begin to shift. We will be opening our first market in Phoenix, Arizona in the next few months and we will begin to test this theory.
