Thanks to the Pixar movie, this french vegetarian dish ratatouille is originally from the south of France, more specifically in a provence close to Nice. How does it taste? Wow, it's so yummy. This dish is also extremely popular with those who are health conscious because it's low in calories and high in nutrients. In France, this was a very common dish my family could whip up for dinner on a busy day. Bon appetit!
The ingredients for 4 servings: - 2 zucchini - 2 eggplants - 2 bells peppers (a red and a green) - 3 tomatoes - 1 onion - 10 black olives - 6 teaspoon of olive oil - 3 garlic cloves - a dash of fresh thyme - salt and pepper
Instructions:
1. Rinse and dice all the veggies. Peeling is not necessary. 2. For the bell pepper, make sure you hollow out and dispose the seeds. 3. After you are done dicing the vegetables, thinly slice the garlic and the black olives. 4. Cut the onion in small pieces and brown them with the veggies in a deep pan or pot with olive oil over a medium fire. 5. While it is browning you can add salt, black pepper and thyme. 6. Cover and simmer for about 20 minutes. Stir occasionally so the veggies don't stick the pan.
Now, enjoy! The ratatouille is ready.
Tip: You can add some grilled extra-firm tofu.
