SuperPower Beet-Mango Quinoa Salad

Quinoa is an ancient seed that originates from the Andes mountains of South America. It was one of the staple foods of the Inca Civilization and referred to as the 'mother grain' believed for giving them exceptional stamina and strength.

The wonder of this grain is that it is unparalleled in the plant kingdom due to its high protein content of 18%! It's a complete protein source, meaning that it includes all nine essential amino acids. It's also high in iron, phosphorous, vitamin E and several B vitamins.

Its fiber rich content makes it ideal for balancing the pH in the intestines and encouraging good digestion. It is also gluten free and it tastes amazing!! This recipe is for a quick and easy chilled salad combining the flavours of beet, mango, cucumber and fresh herbs making it ideal for a light summer meal, or as a side dish anytime of year.

Wash and rinse the quinoa and cook until tender (15mins). Drain and let it cool to room temperature. Add remaining ingredients and serve.


4 raw shredded beets 

1 raw shredded carrot

1 cup of cooked quinoa

2 tomatoes diced

1 mango cubed

1 cup of diced cucumber

chopped celery

chopped fresh mint

lemon juice

2 tsp olive oil

1 tsp apple cider vinegar

Soy feta

Roasted Sunflower and Pumpkin seeds

Salt and pepper to taste
