I always have hummus ready at home and keep working on recipes to use it. This is a simple and yummy recipe that I often try at home. Its wholesome and surely makes a great meal. Enjoy these fabulous wraps as a quick and nutritious element of lunches for kids going off to school, or incorporate them into your office lunch that will make co-workers swoon!
All you need is:
a. 1 pack spinach leaves
b. 2 tablespoons hummus
c. 1 avocado diced
d. 1 carrot diced
e. 1 onion chopped small
f. 1 tablespoon lemon juice
g. 1 cup cilantro
h. Salt
i. Black pepper
j. 2-3 Tortillas
Instructions:
Chop all the veggies avocado, carrots, onions. Wash and tear the spinach leaves into bite sizes.
Warm the tortillas on low heat and place on a platter. Spread hummus on the warm tortillas. Layer out chopped carrots, onions, avocados and cilantro. Top with spinach leaves. Sprinkle a little bit of lemon juice, salt and pepper. Roll the tortillas firmly and cut it into two halves. Serve and enjoy.

Voted. Wow, these sound amazing, and so healthy! I usually have most of the ingredients for these at home, so they will be easy for me to make. I think avocado, carrot and spinach are delicious combination, so well done for this sandwich recipe!
