Spinach Penne Pasta

As a pasta fan since childhood, it was one of the first recipes that I learnt while I was still in grade school; though I must say that I found my passion in cooking only a couple of years ago. With this new found passion I have been in a constant search to try out new recipes and healthy eating options.

Pasta is one item I experiment with since I know my husband is fond of it too. I especially like to try out non-tomato based pasta recipes since we relish them more than the tomato based ones. I had been thinking of trying pasta with spinach for a while now and recently tried this recipe with whole wheat penne pasta and spinach. It turned out to be yummy and was very satisfying for me as it was a healthy mix.

Ingredients (Serves 2):

  • ½ pound whole wheat Penne pasta
  • 2 cups fresh Spinach
  • 3 -4 cloves Garlic cloves sliced
  • ½ cup chopped Green beans
  • 1 tablespoon Olive oil
  • Black pepper to taste
  • Salt to taste
  • Vegan Parmesan or shredded mozzarella (optional)
  • Pine nuts for Garlic (Optional) 

Boil the pasta as per the directions on the pack, drain, and set aside. Wash the spinach and chop lightly. Chop the green beans and slice the garlic cloves and keep aside. Now take a skillet and heat one tablespoon olive oil. Add the sliced garlic cloves and the green beans. Stir and cook on medium flame for a few minutes till the beans are soft. Now add the chopped spinach and stir for a bit. Add the drained pasta and stir. Add salt and pepper to taste. If you are a cheese lover, feel free to sprinkle some. I went without it. Your spinach penne pasta is ready. Serve warm just enjoy!
