Prep Time: About 5 mins from start to finish
Need a last minute party snack? An addition to a packed lunch? Something for that picnic or backpaccking trip? This is easy, quick, and you probably have all the ingredients in your pantry.
- 1 tblsp. canola oil
- 1/4 cup unpopped popcorn
- 1/4 cup unsalted cashews, or pumpkin seeds or whatever YOU like
- 1/3 cup sugar
- 1/3 cup maple syrup
- 1 tblsp vegan butter
- 1/2 tsp seasalt
- 1/4 tsp cayenne
Heat oil over medium high heat. Line a cookie sheet with parchment paper; set aside.Add popcorn to oil, cover and cook until popping stops, shaking pan frequently. Remove from heat. Stir in nuts or seeds. Cobine sugar and remaining ingredients in a small saucepan. Bring to a boil. Cook 1 minute. Remove from heat. Cool 1 minute. Pour hot syrup over popcorn mixture. Toss to coat well. Spread on the parchment lined cookie sheet. Cool 3 minutes. Makes about 6 servings.
