I love living in California and feel lucky to have a wide variety of local organic products to choose from and an array of independent markets that carry them.
There is a great local company that makes a line of pre-packaged, protein-rich vegan wraps for lunch on-the-go. They are simple, fresh and flavorful! The only problem is, the price is fairly steep and they aren't practical for feeding a crowd.
I decided I wanted to create a low-cost version to make at home. I wanted to plan ahead, buy the ingredients myself and prepare these portable treats for the whole family.
This recipe gives me everything I wanted with a homemade wrap that is just as tasty and handy as the inspirational original. What more could a veggie-girl need?
Spicy Hummus & Black Bean Wrap Ingredients
- 1 Wrap, Tortilla or sheet of Lavash Flatbread
- 1/4 cup Spicy, Chipoltle or Jalapeno-Cilantro Hummus
- 1 can organic Black Beans, rinsed and drained
- 1/4 cup Scallions, very thinly sliced
- 1/4 cup fresh chopped Cilantro
Prep all ingredients first.
Lay out your wrap or lavash bread. Spread on the hummus first, avoiding the edges of the wrap. Sprinkle a single layer of beans down the center of wrap.
Next, add scallions and fresh chopped cilantro to taste.
Now, fold in ends first and then roll up wrap, pressing a little so it sticks together and flatens out a bit. The end result will be a long, somewhat skinny burrito look-a-like.
That's it! Take it with you anywhere you roam and enjoy!
*You will have plenty of extra beans, just store them in an air-tight container; they will keep for up to a week in the fridge.
