As my grandparents were Italians, we had the habit of eating a lot of pasta at home and one of my favorite pasta meals was spaghetti with meatballs and tomato sauce on top. However, since I became a vegan I had to adapt the recipe a little bit. This recipe is the result of my cooking experiments through which I was trying to create a dish that would substitute my beloved meatball dish.
I started to make meatballs made of soybeans. They are tasty and easy to make and some even say the taste of soy meatballs comes very close to that of meat. The meatballs can be prepared while the pasta is cooking. This recipe is actually not new; many people have made soy meatballs before, but I will show you how I make them:
- 300 grams of soybean powder
- 2 tablespoons of flour
- A handful of chopped onion
- A handful of chopped parsley
- Salt to taste
- Soybean oil
Mix all the ingredients in a bowl and stir for a minute to create the dough. Then take small amounts of dough and shape them into small balls with your hands. Next fry them for a couple of minutes using the soybean oil and voilà; you have created your own soy meatballs!
A tip for those of you who are health-conscious and want to add nutritional value to the meal: Cook the meal with wheat pasta and prepare the sauce with fresh tomatoes and fresh basil.
