I love this salad! And so has everyone I have ever served it to. The only problem is there never seems to be enough! I love the sexy red color and the simplicity of it. Mother nature at her best, with just a few ingredients. Tangy, sweet, sexy, and totally vegan! What's not to love!? :)
Sexy Red Salad
1 lb fresh organic Strawberries
1 pint fresh organic Raspberries
1 bunch seedless organic Red Grapes
1 Pomegranate, seeded and juiced
1 tsp Apricot Jam
1 tbsp Pomegranate juice.
Rinse fruit and drain. Take the tops off the strawberries, slice them in half lengthwise and place in large bowl. Slice the grapes in half and add to strawberries. Seed and juice pomegranate. Add half to all of the seeds and one tablespoon of juice to the fruit mixture. Add apricot jam, toss to coat. Add raspberries last, toss to coat again. Serve at room temperature or slightly chilled, depending on your preference.
I like to serve it in a beautiful dish to highlight the dazzling color of the fruit. You can store any leftovers in the fridge for up to two days. *If you fancy it a bit sweeter, feel free to add a splash of agave syrup or a sprinkle of sugar. If you like it more tart, add a squeeze of fresh lemon juice and enjoy!
