One of the most enjoyable treats in Thailand is a fresh fruit smoothie, which is inexpensive, vegan, made with fresh fruit and a great way to cool down in the strong tropical heat. These smoothies contain salt, which sounds a bit odd at first, but believe me, the combination of sweet fruit and a hit of saltiness is perfect for quenching your thirst and cooling you down!
All kinds of fruit can be used, or a mixture. Some of my favourites include: banana, dragonfruit, guava, and coconut. In the photo provided, I used a combination of guava and pineapple, since that is what I had on hand.
For 4 servings.
One tray of ice cubes
1 cup fruit of your choice
1 cup water or fruit juice, to ease the blending process
pinch of sea salt
sugar (or sweetener) to taste.
Add all ingredients to a blender and blend until ice chunks have dissolved and you are left with slush. Serve with an optional fruit garnish.
