Red lentils are fast cooking legumes making this a perfect summer, or after work meal. You can make it with ghee or if vegan, another oil of choice.
1 cup red lentils
2-3 cups water (2 if you prefer a thicker soup)
1 10 oz can of diced tomatoes
2-3 Tbsps of grated, fresh ginger
1 Tbsp oil
dash of ground cloves
salt to taste
Saute the oil, ginger and cloves together. Add the lentils to the saute. Slowly add water, 1/2 cup at a time so as to gauge the consistency of your soup. Add the can of tomatoes. Bring to a boil and let simmer for about 30-40 minutes. Keep adding the water until you like the consistency.
Serve over rice or quinoa! Enjoy!
