I don't know about you but I love to eat some rabbit food!
I used to get upset when people chided me about eating like a bunny, but now I embrace it. Bunnies do know a thing or two about healthy fast-food! And this bunny knows a thing or two about making healthy fast-food delicious...
This sandwich is filled with rabbit favorites and gets a little bit decadent with the addition of a buttery, flaky vegan croissant to hold all that veggie goodness in. I absolutely adore sprouts so they are featured here. I find them to be hunger-satisfying and noticably enlivening.
Now, I offer you, a nicely balanced sandwich with an interesting side effect- green and fresh rabbit patch breath!
Rabbit Patch Croissant Sandwich
1 cup Alfalfa, Clover or Broccoli Sprouts
1 organic Carrot, finely grated
1/2 cup organic Spinach leaves
1 ripe Avocado, smashed with a little lemon, salt & pepper
1 tbsp Tofutti Herbs & Chive Vegan Cream Cheese (optional)
1 vegan Croissant (Jus Rol brand are great)
1/2 tsp Yellow or Dijon Mustard
Sea Salt & Pepper to taste
1 tbsp Veganaise
*If using Jus Rol vegan croissants, cook according to package directions and let cool.
Slice one croissant in half, lengthwise. Spread Veganaise and mustard over one croissant half. Next spread Tofutti herb cheese on the other half of croissant.
Place spinach leaves on Veganiaise/mustard side. Top leaves with avocado smash and then grated carrot, press down slightly.
Pile sandwich high with sprouts, season with a little salt and pepper. Place Tofutti half of croissant like a lid over the top of sprouts, pressing down slightly to secure ingredients.
That's it! Stick a fancy toothpick in it and serve with pickle spears and chips. Enjoy!

Oh my dear this looks so delicious. I am also a bit of a rabbit at heart. I do love my salads and fresh veggies. I especially love fresh carrots. Voted. I am a sucker for rabbit-food too, and this croissant-wich sounds awesome! Wonderfully indulgent but also healthy. I love the picturesque title as well, as ever!
