Quick Sweet Potato Stir Fry with Spinach and Pine nuts

I am really hooked on this. I was quite low on cash for the past couple of weeks, but I had a bunch of sweet potatoes. I usually put off making them, since they take around 45-50 minutes to cook in the oven, but I tried pan-frying them in a small amount of coconut oil and sliced them with a julienne peeler and the whole process only takes about 15-20 minutes. I have literally been making this once a day for the last two weeks - sometimes even twice a day! I switch up the accompanying vegetables, depending on what I have. It is soooo good. I never thought to do this with sweet potato before. I hope you give it a try. :)


  • 1 small/medium sweet potato, peeled and sliced using a julienne peeler (if you don't have one, a regular peeler will work, I just prefer the shredded strips the julienne peeler makes)
  • handful of spinach
  • 1/2 tbs pine nuts
  • spices of your choosing: cajun seasoning, ground pepper, sea salt, onion powder, garlic powder, nutritional yeast, cayenne powder
  • 2-3 tsp coconut oil


  1. Chop the ends off your sweet potato, peel it and julienne it into strips. Get out a nonstick skillet and heat the coconut oil on medium-high. Add in the shredded sweet potato. Add in the seasoning and spices of your choosing and stir everything so it is all coated. You one some of the sweet potato to be on the cusp of burning, so it is a bit crispy in certain places. Add in the spinach during the last couple of minutes of cooking. The whole cooking process took around 10 minutes, but you could go longer if you'd like.
  2. Serve on a bed of greens with radishes, in a pita, on its own or however else you'd like!
