Well, I was thinking of putting together a curry with coconut milk and this is what came to my mind. This recipe calls out to all potato lovers. Potatoes are always great in a curry and if you make the curry in coconut milk, it turns out absolutely delicious.
This is an easy to cook curry with turmeric and cumin seeds. Coconut milk added with the spices gives it an awesome color, great flavor and the right consistency too. You’ve really got to try it when you can.
Ingredients (Serves 2):
• 2 medium Potatoes diced
• 1 small Onion chopped
• ½ inch Ginger minced
• 1 clove Garlic minced
• 1 teaspoon Cumin seeds
• 1 cup Coconut milk
• 1 Red pepper diced
• 1/2 teaspoon Turmeric powder
• 1/2 teaspoon Cumin powder
• Salt and Black pepper to taste
Heat one teaspoon oil in a pan and add cumin seeds. Then add the minced ginger and garlic. Add the onions and potatoes and stir for a bit. Once the onions are a little soft add the turmeric powder and cumin powder and mix. Now pour in the coconut milk and stir. Cook on low heat for a few minutes till potatoes are almost cooked.
Now add the red peppers and stir. Red peppers add a lovely color and I also like their tangy taste along with the nutrition. Cover and let it cook for about 2-3 minutes. Add salt and pepper to your taste. And voila, your potatoes coconut curry is ready. Serve over warm rice or with an Indian bread.
