Well what is the crazy story behind this recipe? I made way too much popcorn and could not finish it, but did not want to throw it out either. The next day I was craving soup for lunch and decided to cook the popcorn along with vegetables in boiling water. It was surprisingly tasty, and reminiscent of congee.
When making soups, you can always use a vegetable stock, miso, or a bouillon cube, but I prefer not to because they can be overpowering and have that nasty processed flavour. Water will do.
3 cups water
3 cups leftover popcorn
1 scallion, chopped
1 long chilli pepper, chopped
¼ cup, fresh cilantro, chopped
2 tablespoons fresh basil, chopped
Dash of soy sauce
1 teaspoon black pepper
salt to taste.
Add all ingredients to a soup pot and boil for ten minutes, adding more or less salt, to taste. Remove from heat and serve.

Vote no 4. What an ingenious idea! Does the popcorn stay crunchy in the soup, or does it stay soft? I bet it makes the soup taste really good anyway!
