‘Tis the season to be jolly (no, not Christmas – I mean the fact that it is summer! I much prefer this time of year to Christmas.) ‘Tis also the season for salads, which I am eating a lot just lately. They are such great summer food, as they are refreshing, healthy and tasty, not to mention quick and easy to prepare. I made this little gem recently, serving it with a home-made vinaigrette dressing of apple cider vinegar and walnut oil. I guess it is similar to a Waldorf salad,one of my favourites, with the use of fruit and nuts, and the winning mixture of sweet and savoury (and also quite tangy). I always think that pears go particularly well with blue vegan cheese and walnuts in this ensemble, with some mixed salad leaves and dressing. The best blue cheese to use here is one of the soft creamy varieties, if you can get it. Owing to the use of cheese and nuts it’s quite filling for a salad, especially served with bread, crackers, etc. (also probably quite high in calories, but at least it is mostly healthy stuff, full of nutrition!)
Ingredients (Serves 2)
For the salad:
1 large ripe pear, cut into chunks
Large handful of walnuts, chopped (or left whole, if you like it quite rustic and chunky!)
Around 75 g of vegan blue cheese of your choice
Handful of mixed salad leaves, e.g. spinach, arugula, lollo rosso, lettuce, etc.
For the dressing:
6 fl oz. /120 ml walnut oil
2 fl oz. / 30 ml apple cider vinegar
1-2 drops of agave syrup (or a pinch of sugar)
1 clove garlic, minced or crushed
Salt and pepper to taste
1) Chop up pear, walnuts and cheese and put in a large bowl with the salad leaves.
2) In another large bowl, whisk together the cider vinegar, walnut oil, garlic and seasoning. Add the syrup, and chill in the fridge for around 20 minutes.
3) When ready to eat, dress salad and serve with crusty bread, etc
