This is best for the days when you are running short on time and need to prepare something quick…and nutritious too. Well, thank God for Tofu. I love the fact that it cooks fast and can play the role of an entree or a side just as efficiently. It has a very mild flavor and therefore lends to a wide range of cooking. You can have it for breakfast, lunch or dinner.
I make this quite often and there’s plenty of scope for variations. The ingredients for most of the time will be available right in your kitchen. All you need is a block of extra firm tofu. And spinach packs in the additional dash of nutrition and satisfaction.
Ingredients (Serves 2):
- 1 pack Extra Firm Tofu - cubed
- ½ Red bell pepper – diced
- 3/4 cup Baby spinach
- 2 cloves Garlic – thin sliced or minced
- 1 tsp Cumin seeds
- 1/2 tsp Turmeric (optional)
- Ground Black Pepper
- Salt to taste
- Oil to cook
Take the extra firm tofu and place it on a paper towel for a few minutes to drain out all the water. Dice into ½ or 1 inch cubes.
Heat 1 table spoon oil in a pan and add cumin seeds. Then add garlic, tofu and turmeric. Stir and let it cook for about 2-3 minutes. Now add red bell pepper, stir and cook for another minute.
Add the baby spinach and just stir for a wee bit so that it becomes soft. Add salt and about 5-6 grinds of black pepper. Remove out to a plate and serve hot. Its great with a toast or a tortilla. Now isn’t that easy, nutritious and super fast?
