Ingredients for Dough:
- 450 g spelt flour
- 4 g dry yeast
- 70 g melted coconut fat or vegetable oil
- 1 cup rice milk
- ¼ - ½ cup freshly squeezed orange juice
- Pinch of salt
- 50 g powdered sugar
- 1 tbsp orange zest (organic)
Ingredients for Filling:
- 3 tablespoons shredded coconut
- 3-4 tbsp cane sugar
- 1 orange, juiced
- 1 tbsp coconut butter
- 1 tbsp orange zest (organic)
- 1 tsp cinnamon
Ingredients for Glaze:
- 1 cup powdered sugar
- ½ cup orange juice
- 1 tbsp lemon juice
Directions:
- Place the dry ingredients for the dough in your standing mixer, and use the dough hook to mix together.
- Heat the rice milk to about body temperature, and add to the flour. Pour in the oil and start mixing. Depending on dryness of the dough add the orange juice, a little at a time, but as much as needed to bring the dough together. It should be a little firm and not sticky.
- Brush it with oil, cover with plastic wrap, and keep warm until it has doubled in size; for about an hour or so.
- Meanwhile prepare the filling by mixing the ingredients in a bowl. Let sit.
- When you are ready, place the dough onto a floured surface and roll it in a large rectangular shape – I personally prefer it thinner.
- Use the back of a spoon to spread the filling evenly and roll the dough. Cut even pieces using sharp knife or dental floss (place under the roll, cross on top and pull to cut a piece).
- Place in a baking pan lined with baking paper and let rise again while your oven is preheating to 375 F.
- Bake for about 25-30 minutes.
- While the fragrant smell of freshly baked rolls is spreading around, prepare the glaze. Just slowly add the lemon and orange juice to the powdered sugar, and mix well until you get a smooth mixture. The thickness of the glaze is up to you.
- These are a bit of work, but they're oh so worth it when you taste them!
