Moroccan Inspired Yellow Pea Soup

This is a very easy and savoury vegetable soup inspired by Moroccan flavours. The entire dish can be cooked and served within half an hour, making it ideal if you do not have lot of time. This recipe will make about 8-10 servings.

1 cup dried yellow peas

4 cups water

1 cup shredded green cabbage

1 carrot, chopped

1 potato, diced

2 tablespoons salt

1 teaspoon black pepper

½ teaspoon cinnamon

½ teaspoon cumin seeds

2 tablespoons chopped cilantro

1 inch knob ginger, minced

2 cloves garlic, chopped

1 scallion, chopped

1 tablespoon turmeric

1 teaspoon saffron

3-4 dried apricots, chopped

Add all ingredients to a large soup pot and boil for twenty to thirty minutes. That’s it! You may want to add more salt – to taste. If you would like an extra zing of flavour, serve with a pomegranate seed garish.
