Most Indian moms are famous for showering love on their children in the form of parathas. Though the potato stuffed paratha called Aloo paratha is my utmost favorite, I also like the radish stuffed paratha. It is famously called mooli paratha. Ideal for a heavy and scrumptious Indian breakfast, this North Indian dish can make your taste buds extremely happy. Here are the things you’ll need.
4 cups of grated radish
5 tablespoons of oil
A pinch of ajwain or carom seeds
1 teaspoon ginger paste
1 teaspoon of cumin seeds
Pinch of salt
2 green chilies
1 teaspoon red chili powder
½ teaspoon garam masala
½ teaspoon amchur powder also known as dried mango powder
1 1/2 cups of whole wheat flour
½ cup of water for kneading the dough
Step 1: Sprinkle some salt on the grated radish and let it rest for about 15 minutes.
Step 2: After 15 minutes, drain all the water.
Step 3: Now take a pan and place it on medium heat. Add some oil, ajwain, cumin seeds and let them sputter.
Step 4: Add the green chili, ginger paste and grated radish to the pan and sauté them for 5 minutes.
Step 5: Now add the dry spices to the pan and let them infuse with the radish mixture.
Step 6: Once the mixture is thick and dry, you can turn off the flame.
Step 7: Knead the dough by mixing the flour, salt, and water in a bowl. Let it rest for 15 minutes.
Step 8: Divide the dough into 6 equal portions and make smooth balls out of them. Flatten them and fill in the cooled radish mixture. Gather the edges of the dough and seal them.
Step 9: Dust some dry flour on the stuffed flatten dough as you roll it out.
Step 10: Take a pan and add some oil, fry each side of the mooli paratha until it is golden brown. Now repeat this process for the remaining five parathas.
Serve this vegan mooli paratha piping hot!
