To complete my tofu kick this week, I thought I'd share a recipe inspired by a vegetarian cooking class I took five years ago. Until then, I truly had no clue how delicious and non-depriving vegan and vegetarian cooking could be! That class opened my eyes and caused my tongue to do a little dance.
This pie is made of our versatile friend tofu, and has a creamy-dreamy-decadence that will easily fool you as well as the masses.
Try this one on company without telling them it's vegan. You will be amazed by their surprised and happy reactions!
Instant Vegan Mocha Mousse Pie
1 1/4 pound Silken Tofu
3/4 cup vegan Semi-Sweet Chocolate Chips
1 tbsp Powdered Sugar (or other sweetener)
1 tsp- 1 tbsp Instant Coffee Granules (depending on how strong you like it)
1 tsp Vanilla Extract
1 pre-made Vegan Chocolate Cookie Pie Shell
1/3 cup Crushed Hazelnuts (optional)
1/3 cup Vegan Whipped Cream or Whipped Coconut Milk (optional)
Place tofu and sugar/sweetener in a blender or food processor and puree until smooth.
Melt chocolate slowly in ten second intervals in a microwave, or in a glass bowl over a pot of hot water on the stove top, stirring occasionally. Be sure chocolate does not get too hot.
Add vanilla and coffee granules to chocolate and pour into blender with tofu. Blend very well then pour mixture into chocolate pie shell. Chill thoroughly in fridge before serving.
*Garnish with vegan whippy and/or crushed hazelnuts as desired.
Voila! Instant Vegan Mocha Mousse Pie. Just the right amount of naughty and nice.
