Innovative Lunch Ideas for Vegans on the Go

Most fast food restaurants don't offer vegan options for fast meals. And the food that they do sell is far from healthy. Because of this, it is often best to bring your own lunch to work that is made ahead of time, so you can just grab it on go in the morning. Read on for four lunch ideas that are delicious, easy to make, and completely vegan.

Tabbouleh Salad

Prepare a box of tabbouleh according to the directions. But be sure to use olive oil instead of the butter that it calls for in the recipe. When it is completely cool, stir in some diced cucumbers and tomatoes. Then, add a small handful of fresh mint and a spoonful of finely diced scallions. This will make enough for two or three lunches.

Warm Black Bean Fiesta Dish

Rinse a can of black beans and a can of corn under cool water. Then, drain the water from them, and put them in a bowl. Toss a spoonful of taco seasoning into the mixture before adding some diced tomatoes and fresh cilantro. Pour this mixture over a bed of prepared rice. It can be reheated in a microwave or eaten cold.

Fresh Vegetable Wrap with Coconut Yogurt

First, slice up a few kinds of veggies and some vegan cheese. Then, mix a few sprigs of fresh dill together with some plain coconut-based yogurt. Keep the vegetables and yogurt mixture separate. When it is lunch time, you can spread the yogurt on a piece of flat bread, and top it with the veggies and vegan cheese. Some companies, like Klosterman Baking Company, know how versatile flatbread is. This is also a great afternoon snack that is much healthier than a stop at the vending machine.

Baked Sweet Potatoes

Sweet potatoes cook in just a few minutes in the microwave if you wrap them tightly with plastic wrap first. They keep very well in the refrigerator when they are prepared this way ahead of time too. Instead of the traditional sour cream and butter most non-vegans add, you can blend up tofu with a few spoonfuls of salsa for a vegan topping for them that is much healthier.

These are just a few of the many possible healthy vegan dishes that can be made. Feel free to change them up a little to use the ingredients that you already have on hand. They will all keep well for a few days in the refrigerator, so you can make them ahead of time on the weekends.
