I've been really enjoying chopping up a bunch of veggies and wrapping them in rice paper. It's super fast and very healthy! Won't weigh you down or make you feel lethargic. They are basically salads wrapped in a convenient edible wrapper. I like to do all the chopping in the morning, and then assemble the wraps at lunch time.
Rice Paper is also a good alternative to bread. Three sheets of rice paper is around 105 calories.
Here is what I made for lunch and dinner today (two slightly different recipes):
Chickpea "Tuna" Avocado Cold Rolls:
Ingredients:
- Rice Paper
- Avocado Slices
- Alfalfa Sprouts
- Baby Spinach
- Green Olives, sliced
- Tomato
- Red Bell Pepper
- Chickpea "Tuna" Spread
I cut them in half on an angle and served with hot pepper jelly.
Grilled Portobello Cold Rolls:
Ingredients:
- Rice Paper
- Alfalfa Sprouts
- Baby Spinach
- Sliced Tomato
- Grilled Portobello Mushroom slices
Served with a vegan cajun mayo.
