Give me one example of a person who hasn't ever loved ice cream. We all have at some point or the other loved this dessert wholeheartedly. Even though it generally has a high sugar and caloric content, and isn't one of the healthiest desserts on the planet, we create healthier versions to satiate our cravings and match our morals.
Let’s get started with this easy, (healthier) version of ice cream, for which we only need seven ingredients!
- 2 cups water
- 1cup sugar
- 1.5 ounces sweet chocolate
- 1 tablespoon apple cider vinegar
- 1 teaspoon espresso powder
- 1 pinch salt
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 1 cup cocoa powder
- ¾ cup unsalted cashews
- 4 ounces of brownie chunks, chopped into 1.2 inch cubes
- 2 cups arrowroot flour
STEP 1: Take a medium-sized sauce pan. Add the cashews, water, sugar, espresso powder, and salt.
STEP 2: Cover the sauce pan, bring the contents in it to a boil, and let the mixture cook for ten minutes.
STEP 3: Add the arrowroot powder & cocoa powder and let the mixture cook five more minutes.
STEP 4: Now transfer the mixture to a blender.
STEP 5: Add the vegetable oil, apple cider vinegar, vanilla extract, and sweet chocolate to mixture. Blend for at least a minute.
STEP 6: Transfer the mixture to a covered container and refrigerate for at least two hours.
STEP 7: Once the ice cream has cooled, transfer the mixture to an ice cream maker.
STEP 8: Mix for approximately twenty minutes. And add the brownie chunks and stir.
STEP 9: After that, simply transfer the ice cream and store it in the freezer.
