Honestly - who doesn't love edamame? The light green crunchy beans are so fun to eat and incredibly satisfying due to their high protein content. They are a bit like peanuts - hard to stop once you've started!
My son gave me a box of flaked sea salt for Mother's Day and I immediately thought of these yummy snacks. However, I did want to give them an extra zip that I hadn't experienced before. I decided to coat them in a touch of sesame oil and grill them in their shells. Honestly, there's no going back for me. The combination of the sesame, salt and smoky grill flavor with the edamame was sumptuous. They can be eaten plain or dipped in a touch of light soy sauce.
Enjoy!
- 10 ounce bag of fozen organic edamame
- 1/2 teaspoon toasted sesame oil
- 1 teaspoon canola oil
- flaked sea salt and ground pepper to taste
Prepare edamame according to package directions. Drain and pat dry. In a medium bowl mix edamame with both oil. Heat a cast iron pan or grill until it is very hot - almost smoking. Add edamame and cook until both sides are slightly charred.
Place in serving bowl and sprinkle with salt and pepper.
