Grilled Potatoes with Vegan Spicy Cilantro Sauce

Hey, vegans! This easy and simple-to-prepare snack will be a sure fire crowd pleaser. This is one vegan dish nobody will be able to pass by. Furthermore, when you serve this delicious spicy cilantro sauce, nobody will even be able to tell it's vegan.

Ingredients, Vegan Spicy Cilantro Sauce

  • 1 Cup plain soy yogurt or any plain vegan non-dairy yogurt
  • ½ Cups non-dairy, non-soy nut cream or any vegan sour cream
  • 1 Large fresh jalapeno, cored, seeded, and chopped fine (you can substitute this or any hot chili pepper)
  • ¼ Cup fresh cilantro, chopped
  • 2 Tablespoons raw onion, grated
  • 2 Teaspoon garlic, grated
  • 3 Tablespoons hot or mild salsa 

Prepare Vegan Spicy Cilantro Sauce

  1. In a medium size mixing bowl add plain soy yogurt and nut cream.
  2. Stir until the mixture is smooth.
  3. Add jalapeno, cilantro, onion, garlic and salsa to your mixture.
  4. Mix all ingredients into your mixture.
  5. Cover tightly with plastic wrap and refrigerate for ½ hour. 

* This sauce can be stored up to 2 days in your refrigerator. 

Ingredients, Potatoes

  • 6 Large sweet potatoes, cleaned, with skins intact
  • 6 Large Russet potatoes, cleaned, with skins intact
  • ¼ Cup olive oil
  • Salt and fresh ground black pepper to taste 

Prepare Potatoes

  1. Prepare and light your grill. (You can use a gas grill, but I find it works best over hot coals)
  2. Cut your sweet potatoes lengthwise into 8 pieces.
  3. Cut your russet potatoes lengthwise into 8 pieces.
  4. Place your cut sweet potatoes and russet potatoes on a rimmed baking dish with the skin side down.
  5. Brush all cut sides of your potatoes with olive oil.
  6. Sprinkle with salt and pepper.
  7. When the coals on your grill are gray, place the potato spears on the gill with the cut side down.
  8. Cook your potatoes for about 8 minutes, turning often, or until they are slightly charred in some spots and cooked through.
  9. Test the potato spears with the end of a knife or fork to see if they are soft and cooked through.
  10. Remove the potatoes from the grill and arrange them on a serving platter.
  11. Serve hot with the spicy cilantro dipping sauce.
