Green Avocado Soup

The beauty of avocado soup is that you can have it either warm, or chilled, making it perfect any time of year.

I have decided to include a lot of green coloured ingredients in this soup, and really play with colour without compromising flavour.

For one serving:

  • 1 large avocado
  • 1 lime, juiced
  • ¼ cup fresh basil leaves
  • ¼ cup fresh cilantro leaves
  • 1 scallion, chopped
  • 1 ½ cup water
  • 1 clove garlic
  • salt and pepper to taste


  1. Scrape the avocado meat and discard the seed and skin.
  2. Add all ingredients to a blender, or food processor and blend until smooth. If you want a warm version, heat the contents gently in a saucepan before serving, do not boil, the avocado will begin to turn brown if it is too hot.
  3. Serve immediately with bread sticks, or toasted bread.

    Vote #4! How do you tell at the grocery store if the avocado is good or ripe?

      If it feels soft under your fingers. To tell you the truth, in North America, the avocadoes are very rarely ripe at the store. I've almost always had to leave my avocadoes for two or three days on the counter to make guacamole or whatever else I was making with it.

        Thanks Snake Witch for the tip! I am thinking that you are correct about the "very rarely ripe at the store" comment concerning the U.S. Maybe because a large supply of the avocados are shipped in across the ocean.

    Oh, this is a great recipe for a cold soup! I love the idea of doing this. I'm not sure about heating it, though, because I've had cooked avocado before in a stir fry and didn't enjoy it. But this is a fantastic recipe for a hot summer day! I would go so far as to suggest adding a bit of ice in it and perhaps some more water to make it into a drink for those, like me, who are crazy enough about veggies to drink them like this! Voted!

    Voted. It sounds deliciously different, like your other recipes Kristo! I have never tried avocado cooked, nor seen any recipes where it is heated, other than this one, and your blog explains why that is: clearly you need to be careful about heating it! I think |'ll try the cold version of this, yum!
