In kindergarten my nephew heard the Gingerbread Man story and came back home wanting to eat a Gingerbread Man. Of course I can't resist when he asks me for something so we went into the kitchen and starting making one. Since I am a vegan, we made a vegan Gingerbread Man, which is also a lot healthier than the one from the story. Try making it with your children; they will definitely not notice the difference in taste and they will have fun preparing it. Here goes my recipe:
It is not super-fast to make and at the end you will have a lot of dirty dishes, but it is worth it as it has a low fat content and tastes delicious.
300 grams of whole wheat flour
100ml of boiling water
25ml of vegetable oil
25ml of soy milk
100ml of brown sugar
2 tablespoons of ground flax seeds
3 tablespoons of ground ginger
2 teaspoons of baking soda
1 teaspoon of cinnamon
Mix the vegetable oil, soy milk, brown sugar, flax seeds, ginger and cinnamon in a bowl.
In another bowl mix the baking soda with the boiled water and put this mix into the first bowl. Stir slowly for five minutes and pour the dough into a greased cake pan shaped like a man (if you have it). Let it bake at a low temperature for 30 to 40 minutes.
After that you can draw a face and clothing on it using vegan sugar paste and voilà: your Gingerbread Man is ready to be eaten. But don't let him run away! J
