Firstly, what is a garlic scape? A scape is the plant stalk which grows from a bulb of garlic, and it is important to cut these (if you have your own garlic garden) so that the plant can focus its energy in the bulb, and nowhere else.
The scape tastes mildly of garlic and has a texture is similar to al dente pasta. Because of this, I decided to prepare these similar to a pasta dish.
For three servings.
Handful of fresh garlic scapes
1 head of broccoli, chopped
1 tablespoon tomato paste
½ teaspoon oregano
drizzle of olive oil
salt and pepper to taste
1) Over high heat, warm a wok or frying pan with a drizzle of olive oil.
2) Add the broccoli, and scapes and sauté for 5 minutes.
3) Add the tomato paste, oregano, salt and pepper, stir, cover and steam for two to five minutes so the veggies become tender.
4) Remove from heat and serve.
