Just in time for fall! This dish can be made in less than thirty minutes! It's wholesome, naturally sweetened, and can be customized by adding one’s favorite fresh fruits and toppings. Make perfectly crisp waffles that are tender on the inside and are perfect for everyday breakfast! And for strawberry chocolate waffles, simply add strawberries and chocolate chips to your freshly prepared breakfast. Want to get even more creative? Try a cinnamon-apple or peanut butter-banana version. These three are my favorite variations, but I like to experiment and create new combinations whenever I find the right seasonal ingredients.
INGREDIENTS:
Waffles:
- ¼ cup maple syrup
- 1 ¼ cup unsweetened almond milk
- 1 teaspoon apple cider vinegar
- ½ cup gluten free oats
- ¼ cup olive oil
- 1 ¾ cup gluten free flour blend
- 1 pinch sea salt
- 1 ½ cup baking powder
*Optional ingredients which can be added or substituted one prefers their texture and aroma in their waffle base include: vanilla extract, dairy-free chocolate chips, and/or a cup of fresh fruit.
DIRECTIONS:
STEP 1: Mix almond milk and vinegar in a bowl.
STEP 2: Take olive oil and mix with maple syrup. Set it aside.
STEP 3: Add all of the dry ingredients in a large separate bowl.
STEP 4: Combine dry and wet ingredients together and mix.
STEP 5: Taste a bit of the batter to check the sweetness and consistency of the mixture. Make sure it isn’t extremely thick. If necessary, thin by slowly adding water.
STEP 6: Set the batter aside for ten minutes. In the meantime, preheat your waffle iron.
STEP 7: Once the waffle iron is heated, pour half cup of mixture into one side of your waffle iron.
STEP 8 : Check after a few minutes to see if the waffle is ready. Once done, remove from waffle iron.
STEP 9: Serve hot with your favorite toppings. Waffles can be stored in a freezer for up to two weeks.
*No waffle iron? No problem. You can also bake them in a 400 degree oven until golden brown.
