This recipe is one created by my mother. Although I can’t take the credit for it, it is sooooo good, that I just have to share it with you!
1 cup of flour
¼ cup of chopped or shredded almonds
¼ cup of vegetable or nut oil (preferably almond)
2 tablespoons of buttery vegan margarine (such as Earth Balance)
¼ cup of fruit juice, preferably a thick variety like a smoothie
1 pinch of salt
1 teaspoon of baking soda
If you want, you may add chocolate chips or raisins as well. Delicious!
Bake for 10-15 minutes at 350 degrees or until your toothpick comes out clean.
Makes 12 cookies. Enjoy!
