Zucchini is a summer squash and has a nice juicy flavor. Used in various recipes, it’s great by itself or when cooked with other veggies as a starter as well as an entree. It’s popular in cuisines from around the world. Low in calories it also provides vitamins and minerals. This recipe works as a great appetizer. It tastes great and is a better option than potato fries for me.
Ingredients (Serve 2-3):
• 2 Zucchinis sliced
• ½ cup Flour
• 1 cup vegan Breadcrumbs
• Water for the batter
• 1 tsp ground Flax seeds
• Salt to taste
• Black Pepper to taste
• Cayenne pepper (optional)
Take the ground flax seeds and make a paste with little water. Carolyn had mentioned in a previous post that ground flax seeds can be used as egg substitutes. They are nutritious too. To prepare the batter, add flour, water, salt and pepper into a bowl and mix well. Stir in the flax paste. Add cayenne pepper to make it spicy if you like. Place the bread crumbs on a plate on the side. Heat oil in a pan to fry.
Dip the sliced zucchinis into the batter and then into the bread crumbs to coat well. Gently slide in the oil and fry on both sides for a few minutes till they turn a nice golden brown. Serve with tomato ketchup or a dip of your choice. This is one great snack for parties as well as when watching your favorite TV show.
