By this time, everyone is looking for the perfect last minute Fourth of July dessert that is not only festive, but tastes delicious. Now you have found a treat that will be a crowd pleaser among all, vegan or non vegan. This recipe includes seasonal fresh fruit along with a decadent vegan whipped cream simply made from coconut milk.
- 48 vegan premade mini tart shells
- 3 oz of bluberries
- 1/2 pint of strawberries
- 1 (14 oz) can of full fat coconut milk
- 1/6 cup of vegan powdered sugar
Begin to whip the coconut milk in a large bowl while slowly adding the powdered sugar. Fill each of the tart shells with the whipped coconut cream. Line up the tart shells in a 6 by 8 formation. Then in the top left hand corner put four blueberries in each of 9 tart shells (3 by 3 square) to make the "stars". Then cut the strawberries in thin rounds and cut each round into halves. Start out with a half round of strawberry on each tart. Then on the next row, add on the botton half of those tarts, a half round of strawberry. Keep repeating this and you will be left with the cutest american flag dessert for your July 4th party.

Vote no 3. It sounds delicious and decorative! I am wondering if I could do a version of this with the Union Jack (British flag). Or might be a lot easier to do it based on the English flag, which is a red cross on a white background! Great idea to have a tart that resembles a national flag anyway.
